I love spring rolls and though I sometimes indulge in the rice paper wraps for them (You can see them in the photo below), it’s just as easy and delicious to use a big leaf of lettuce. I use the Taste of Thai sweet chili sauce. It has all real ingredients, no corn syrup and is actually quite low in sugar and you only need a little bit. You could also use a peanut or almond satay or any other sauce you like on your spring rolls.
I’ve also had these made with shredded Vietnamese pork and mint leaves that was so fantastic I often dream about driving back to NJ just to have one. One day, I’m going to futz around with some recipes until I get it right and I promise I’ll post it. Until this, this is a great fresh, crispy snack to have on Sundays for football watching instead of chips.
Quick and Easy Spring Roll Wraps
What you need:
- carrots, peeled and julienned
- cucumbers, peeled, seeds removed and julienned
- 1 lb shrimp, cooked and cooled
- avocado, sliced
- large head of lettuce
What you do:
