One of my hubby’s favorite old school treats was that big yellow box of Raisinets. At the movies, we’d get a large popcorn and a box of those babies and eat ourselves to a stomach ache. Now, even though we do indulge on occasion with traditional “treats,” I always have my brain on, trying to find ways to make them healthier.
Now, I suppose I could have just melted a dark chocolate bar and covered the raisins that way. Easy, right? But what if there was a way to make them HEALTHIER?
For super easy and quick recipe, I used coconut oil, Ghirardelli dark cocoa powder, liquid stevia, honey, heavy whipping cream (which could in theory be omitted), and raisins. That’s it. One of these little clusters is a great way to satiate a sweet tooth without totally pumping your body full of crap. Quick tip: If you use very dark cocoa powder, it may be seem bitter and you’ll need either less cocoa powder or more sweetener. Just keep this in mind.
Granted they may look like little piles of stuff you’d find while walking in the woods but I promise they don’t taste that way.
Now, to Nestle’s credit, at least it doesn’t have partially hydrogenated oils and HFCS. But still, why not cut down on extra ingredients when you can? And when it literally took me five minutes to make these?
Recipe: Paleo Chocolate-Covered Raisin Clusters
Ingredients
- 1/4 c. coconut oil
- 2 tbsp. cocoa powder (the higher quality and darker, the better)
- 1 tsp. vanilla
- 15 drops liquid stevia
- 1 tsp. honey
- 3 tbsp. heavy whipping cream (optional)
- 10-12 oz. raisins (standard pkg)
Instructions
- In a saucepan on medium, melt the coconut oil, and whisk in cocoa powder, vanilla, stevia, and honey.
- When this is totally blended, turn off the heat and quickly whisk in the heavy cream.
- Stir in the raisins.
- On a cookie sheet lined with parchment (yes, this is kind of necessary), spoon out clusters of the mixture.
- Stick in freezer until hardened.
- Store in fridge or freezer, otherwise the coconut oil will melt and make messy, albeit delicious, goo.
