Back in NJ there was a Melting Pot – a pretty large chain fondue restaurant. It was one of my favorite places to eat, especially for a date night or a girl’s night out. The whole process – cheese, meat, dessert – often took hours, making it a perfect place to catch up or just enjoy each other’s company.
This may seem silly but one of the things I loved the most from this place was the sauces/dips that came with the main course – “green goddess” for the boiled potatoes: a sort of chives meets sour cream, plum thai sauce, “angry” sauce for the shrimp, and this creamy yellow curry yogurt sauce that I loved on chicken.
So when I decided to roast cauliflower tonight with some Indian spices, I decided to recreate the sauce to the best of my memory and pour it over the top. It took three or four tries and it’s still not exaaaaaaactly how I remember it, but it’s dang close and still delicious in it’s own right. The cool creamy curry sauce was perfect over the hot crispy cauliflower.
Indian Roasted Cauliflower with Curry Yogurt Cream Sauce
What you need:
For the roasted cauliflower:
- 1 medium head cauliflower
- 1 c. chicken stock
- 1 tsbp fat (I used bacon fat but you can use butter, oil, lard, coconut oil, whatever floats your boat)
- 1 tsp yellow curry powder
- 1/4 tsp garam masala (sub coriander/allspice or omit)
- 1/2 tsp. paprika
- few twists black pepper
For the curry yogurt sauce:
- 1/4 c. plain Greek yogurt
- 1 tbsp mayo
- 2 tbsp yellow mustard
- 1-2 tsp honey
- 1/4 tsp yellow curry powder
What you do:
- Break/cut the cauliflower into florets and place in 13X9 baking dish.
- Pour chicken stock over the cauliflower and cover with your fat of choice. I simply places small dobs of bacon fat around the dish.
- Sprinkle the currry, paprika, garam masala (if used) and black pepper over the top
- Bake at 375 for 30-40 minutes, tossing every 10-15 minutes or so.
- By the time this comes out, there will be no liquid left and the edges will be cripsy while the cauliflower remains soft.
- Make the yogurt sauce by mixing all ingredients.
- Spoon sauce over hot cauliflower and serve.
