Ok, so I know I’ve been doing a lot of “baked” goods lately but it’s only because I’ve been trying new recipes to get my kids to still be able to have their “treats” but make them in a way that is not only gluten-free but actually HEALTHY.
I used Sunbutter in this recipe because I had an extra jar but any nut butter would work – the Sunbutter keeps this recipe nut-free as well which is great for those of you with nut allergies. The only weird thing is that the Sunbutter turns slightly dark green when cooked. The taste is the same and my kids thought it was cool to eat green “brownies.”
I used a locally made organic jam and only about 2 tbsp for the whole recipe – you could sub out whatever you want (or – gasp – even Nutella!) and the recipe for the “cake” part only uses applesauce and honey to sweeten as well. I spread the battler thinly in two aluminum cake pans and then let them cool completely before trying to remove. I simply put it on a platter, spread the jam on one, put the other on top sandwich-style and then cut them into squares. The recipe is simple, easy, and delicious. Store them loosely wrapped in foil; they are too moist to keep in a container.
Recipe: Grain-Free Sunbutter and Jelly Squares
- 2 c. Sunbutter (1 16 oz. jar)
- 1 egg
- 1 tsp. baking soda
- 1/3 c. applesauce
- 2 tbsp. honey
- 2 tbsp organic preserves
- Mix all ingredients except the preserves with a hand mixer or blender.
- Pour even amount into two cake pans (8X8 square or 9-in round) so that the bottom of covered about 1/2 inch thick.
- Bake at 350 for 10-15 minutes, until cooked through.
- Let cook completely.
- Remove from pans and spread jam on top of one in a thin even layer.
- Place other cake on top.
- Slice into squares.
